
Aji (Ecuadorian hot sauce)
Whenever we're in Ecuador we put this sauce on anything savory. It is the best!

Recipe:
4 hot red peppers (aji peppers or similar small hot pepper)
2 garlic cloves
1 medium white onion chopped
1/2 cup of water
2 large tomatoes, peeled, seeded and chopped
3 tablespoons of scallions, chopped
1 tablespoon of cilantro, chopped
1 tablespoon fresh coriander, chopped
1 tablespoon fresh flat leaf parsley, chopped
1 lemon juice the juice
2 tablespoons olive oil
1 tablespoon salt
Directions:
Combine the water, lemon juice, olive oil, aji peppers, garlic, 3 tablespoons of chopped tomatoes, onion, and cilantro in a blender. Puree until smooth.
Add the remaining ingredients to the puree and mix well.
Add salt to taste.
